About the workshop: Participants will learn how to use cauliflower as a rice alternative. Participants will learn crusting techniques and how to approximate deep frying methods through baking. Two kinds of favorite cookies made with low glycemic, hi protein ingredients will be studied here.

Theory: Good Fats, Bad Fats.

About the workshop: Participants will study pureeing methods in making the soup. One of the five mother sauces, bechamel, will be learnt as the basis for both a bolognese sauce later in the course and the ever-popular mac n' cheese creation. Participants will learn how to make the classic brownie that packs both energy and flavor.

About the workshop: Participants will learn how to make a a basic tomato sauce and marinara sauce with hidden vegetables. A yummy chicken skewer recipe accompanies this menu. Finally, a sugar free, hi protein banana bread will be studied that will work well for tea time or as a start to any day.

Theory: Sugar is Thy Enemy: Working with Sugar Substitutes  .

About the workshop: Participants will learn how to create a gourmet asian meal (no hot spices included). A sugar free, grain free muffin will top of the meal. This basic muffin recipe can be used to make other muffin creations that will be a great hi-protein addition to any breakfast of snack time.

Theory: Avoiding Hidden Sugars: Working with Low Glycemic Fruits and Vegetables .

About the workshop: Participants will learn how to create a pureed soup. Slow cooking beef is the focus of this workshop. However, part of the meat will also be used to show how to turn a healthy cut of meat into a delicious, gourmet meatloaf. Finally, participants will learn how to create a grain free pie crust with the mini apple pies.

Theory: Avoiding Hidden Sugars: Working with Low Glycemic, Hi Protein Flours 

About the workshop: Participants will learn how to create various cupcakes. This will be the basis for making full version cakes. There will be additional focus on 4 kinds of frosting to finish off their cake creations! Two popular quick breads will also be learnt: pancakes and crepes.

About the workshop: Participants will learn how to create their own low glycemic, high protein pasta. This is paired with understanding how to create various sauces that will go well with their healthy pastas. They will also create their own raviolis and lasagna.

About the workshop: Participants will learn how to make their own grain free pastry creation using the mighty quinoa seed. They will learn how to re-work the classic shepherd's pie into a healthier low glycemic creation. They will work with tender greens. Finally, they will create a tender, moist cake that will go over well at birthdays.
