Fab and Full of Nutrition

Gourmet and healthy are often at odds with each other, but not in this 8 series workshop. This workshop covers how to buy, prepare and cook food that nourishes and promotes our bodies' well-being. The food will work well for children and adults alike. Nutritious doesn't have to mean a plate of salad at every turn, or turning to raw foods or never having to slather butter on a wonderful piece of toast or not having that juicy piece of steak or that truflle chocolate cake.

Who said something nutritious had to be drudgery? You're going to enjoy boosting your metabolism and energy with the methods, ingredients, clever subsitutions proposed in this series. Your bodies will thank you for it. Our children will be healthier for it.

This is not a diet program. I am not a nutritionist. I am, however, an avid reader of health and nutritional subjects. I pour over books, information, search the net, talk to health practitioners about food and health. After all that I have learnt over the years, this series reflects the body of work of people I've followed that essentially prescibe a gluten free, low glycemic, hi lean protein diet.

Lean Proteins, Good Carbs and Healthy Fats

The course will focus on a menu that is high in lean proteins, good carbs and healthy oils and fats. If you believe as I do that sugar is thy enemy wreaking havoc on our blood sugar levels and being the leading cause of disease, then you will understand the focus on foods that have low glycemic loading. The carbs used therefore do not include grains like wheat and rice which will tend to spike our blood sugar levels. Instead, we introduce the use of flours like almond, coconut and the mighty quinoa ('keen-wah") seed, among others.

I am not afraid of fat and enjoy a healthy indulgence over butter. So do my children. The course will focus on how to buy and use the right kind of fat that will not stick to our hearts but rather aid in better cell functioning. The menu is not egg free though we can certainly offer substitutions for that too.

Speaking of eggs, all the research I have done suggests eggs are a great source of protein and cholesterol. Consuming organic eggs actually lowers cholesterol and provides us with the healthy omega-3 fat! We will learn here that eggs consumed moderately have great healthy benefits.

Grain Free

In order to cater to most food sensitivities, the program is grain free (no wheat or rice) and no added gluten. However, we will be using nuts. 

I have followed the body of work of nutritionists like Dr. Mary Enig and Sally Fallon Hansen who have  written books like Eat Fat, Lose Fat: The Healthy Alternative to Trans Fats  or Dr. William Davis who wrote the best selling Wheat Belly or Dr Robery Young of The Ph Miracle. There are many others who follow similar principles. In addition I avidly read numerous nutritional articles and have frequent conversations with nutritionists to understand that a low glycemic, lean protein lifestyle is the better way to a better body. At least until more is discovered towards a healthy gourmet lifestyle!

One Ingredient

I believe in eating foods that have only one ingredient. Let's take margarine versus butter, for example. You only have to look at the ingredient list of a container of margarine to know you are eating a chemistry project, yet marketing hype makes you believe you are consuming something healthy. While the ingredient in organic butter is just cream. This series will focus on no processed foods.

  Organic

I believe in consuming meats and dairy products that come from grass fed cows and poultry products that are organically raised to avoid the hormones and antibiotics that pass to us from non-organic sources. The course will further talk about what other fruits and vegetables should be bought organically.

Your Cake and Eat it Too

Who said you couldn't have your cake and eat it too?  A healthy indulgence is possible using the recipes provided and sinless substitions. Participants will be able to create desserts that can actually boost your metabolism instead of killing it with sugars . All desserts are sugar free. We will not use Splenda, a chemical sweetener but rather recommend Erythritol, a natural occuring alcohol sugar with no side effects and dental benefits. After this course, you should be able to throw a dinner party from appetizer to dessert that is sinless.

Comfort Foods

The menu has been designed with comfort foods in mind so that both children and grown ups may enjoy the same fare. We have tried to stay with the most popular international comfort foods. The style is still in keeping with homestyle gourmet.
